I love tomatoes out of the garden (like those pictured here). I make this simple salad a LOT during the summer. It goes great with our Hummus Dinner or as a side dish to whatever you cook up! This recipe was inspired by eating out at Lebanese and Greek restaurants (yum!). Bonus: it's fast, easy, nutritious + delish and ready to go in about 15 minutes! What's not to like?
Tomato, Cucumber & Red Onion Salad
2 C chopped tomatoes (or halved cherry or pear tomatoes)
1/2 C diced red onions
1 medium cucumber*, large dice
1 small bunch fresh parsley, chopped or torn
drizzle of each: extra virgin olive oil & red wine vinegar
salt & pepper
Combine all in large bowl. Serve.
*if desired, salt & drain cucumbers to remove excess water
