It's fall, and there are apples all around here in the Northwest. A few years ago, I went to Japan with my mother in celebration of her birthday. My little sister happened to be living in Osaka at the time, so we had a place to stay. We travelled around and did a fair amount of sight seeing. I had lived in northern Japan as an exchange student years before, but had never been to that part of the country. At one point in the trip, we ended out in the countryside. We met many warm and friendly people (as was my experience overall in the Kansai area), including my sister's friend her family. We had the distinct pleasure of spending time in her home making dinner. One of the things she shared with us was this recipe for Apple Cake. It is not only dead simple but crazy delicious. I make it a few times a year with whatever apples I have laying around. I hope you like it as much as I do!
Spiced Apple Cake
Ingredients:
2 apples, peeled and diced
1 1/2 cups flour
1 t cinnamon
1/2 t allspice*
1 egg, beaten
1C sugar
4 oz. melted butter (or canola oil)
1 t baking soda
1/2 t nutmeg
1 pinch salt
Directions:
Preheat oven to 350F. Put apples in a bowl, sprinkle with sugar and mix well. Add dry ingredients and mix again. Add melted butter and beaten egg to apple & dry ingredient mixture. (This makes a very thick mixture.)
Cook 50 min. in a greased bundt or ring tin.
Cool completely on a wire rack & sift with powdered sugar. Serving idea: serve with vanilla bean ice cream or gelato. Also great for breakfast with tea!
*I've been known to leave this out.
