Fall is in the air, and somehow baking and any kind of pumpkin recipe is rolling around in my head.  (I even picked up some pumpkin pie spice creamer the other day!)

Look what I found…

I’ve been trying out some recipes around the web, and found some really good one.  So, check them out and see what you think.  And by all means, if you have one to share, do that too.  :)

Pumpkin Spice Cream Cheese Spread

Whole Wheat Pumpkin Pancakes

* Kitchen Note: try using whole wheat pastry flour in this recipe.

Pumpkin Ginger Nut Muffins

* Kitchen Note: I left out the ginger & nuts, and replaced the spices with pumpkin pie spice & cinnamon.

Pumpkin & Spice Bread

* Kitchen Note: Try with 1/2 – 1 cup dried cranberries!

Funny, when I make the Pumpkin Ginger Nut Muffins I plan to leave the ginger out as well.

When it comes to any recipe featuring pumpkin, I’m always sort of bashful with seasonings, I want to taste the pumpkin – not the ginger, nutment, etc. A lot ot the spices in pumpkin recipes are just too obnoxious!
