    Jam Crostada

    I've had a craving for some sort of berry pie. The thing is, I had some leftover cranberry sauce and an extra pie crust dough that needed to be used up. So, I did the next best thing: I improvised. Below is the little recipe I pieced together.

    Recipe: Jam Crostada

    Summary: Easy jam crostada.

    Ingredients

    • 1 pie crust dough
    • 1 cup fruit jam (stirred with a little fruit juice)
    • 1/4 cup toasted almonds (optional)

    Instructions

    1. Preheat oven to 400 F.
    2. Roll out pie crust dough into roughly 12 inch circle, transfer to a baking sheet.
    3. Spread jam in center of crust, leaving 2 inch border.
    4. Fold in edges of crust, leaving a window of jam open.
    5. Brush crust with egg wash.
    6. Sprinkle crostada with almonds.
    7. Bake at 400 F for 30 min., or until golden.
    8. Cool, cut into wedges and serve.

    Variations

    * Use cranberry sauce or any jam. * Omit almonds * Throw in some fresh berries

    Number of servings (yield): 6

    Meal type: dessert
